This essay examines the depiction of French ragout in eighteenth-century English literature, arguing that the dish reflects social apprehension regarding ideological, cultural, and military conflicts between England and France. This essay first traces a brief history of ragout, along with an overview of the dish’s cultural connotation and complexity, in eighteenth-century English society. It next delves into the concept of eighteenth-century English Francophobia, demonstrating that this sentiment was a mixture of national pride and anxiety amid England’s identity crisis under the (...) potential French cultural threat. Finally, the essay examines ragout in eighteenth-century English literature and identifies the dish as the target of French pretension and cultural invasion. This research highlights the fact that eighteenth-century English authors’ satirical portrait of ragout underscored xenophobic gastronomy and cautioned against a simple interpretation of the dish. The caricature and representation of ragout as a feminized, artificial, and laughable dish reinforces eighteenth-century English writers’ concern for the invasion of foreign culture by emphasizing the contrast between authentic ‛Anglo’ meat consumption and ‛Franco’ sophistication. This book analyses the use of the crucial concept of 'taste' in the works of five major seventeenth-century French authors, Méré, Saint Evremond, La Rochefoucauld, La Bruyère and Boileau. It combines close readings of important texts with a thoroughgoing political analysis of seventeenth-century French society in terms of class and gender. Dr Moriarty shows that far from being timeless and universal, the term 'taste' is culture-specific, shifting according to the needs of a writer and his social group. The notion of (...) 'taste' not only helped to shape a new dominant culture, but also registered the conflicts within that culture between a view of taste that presupposted the values of 'polite society' as an exclusive (though not necessarily aristocratic) group, and a view that stressed the value of the classical-humanist tradition as a source of standards ratified by a broader public. this study sheds light not only on the central concept, but also on the individual authors discussed and on the norms of French classical literature in general. Shaftesbury's Characteristicks of Men, Manners, Opinions, Times is a collection of treatises on interconnected themes in moral philosophy, aesthetics, literature, and politics. It was immensely influential on eighteenth-century British taste and manners, literature, and thought, and also onthe Continental Enlightenment. The author was a Whig, a Stoic, and a theist, whose commitment to political liberty and civic virtue shaped all of his other concerns, from the role of the arts in a free state to the nature of the beautiful and (...) the good.This is the first new edition of Shaftesbury's Characteristicks as a coherent collection for almost a century. A substantial Introduction discusses Shaftesbury's works and ideas in the context of his times, and traces the reception and influence of his writings through the eighteenth century andbeyond. A full and scholarly commentary is provided, as well as a complete textual apparatus. The very thorough Index is Shaftesbury's own.The text is essentially that of the first edition of 1711, as marked up with changes by Shaftesbury himself in preparation for the posthumous second edition of 1714; and the striking emblematic engravings he commissioned especially for the second edition are incorporated. Previous studies have shown that object properties are processed faster when they follow properties from the same perceptual modality than properties from different modalities. These findings suggest that language activates sensorimotor processes, which, according to those studies, can only be explained by a modal account of cognition. The current paper shows how a statistical linguistic approach of word co-occurrences can also reliably predict the category of perceptual modality a word belongs to (auditory, olfactory–gustatory, visual–haptic), even though the statistical linguistic approach (...) is less precise than the modal approach (auditory, gustatory, haptic, olfactory, visual). Moreover, the statistical linguistic approach is compared with the modal embodied approach in an experiment in which participants verify properties that share or shift modalities. Response times suggest that fast responses can best be explained by the linguistic account, whereas slower responses can best be explained by the embodied account. These results provide further evidence for the theory that conceptual processing is both linguistic and embodied, whereby less precise linguistic processes precede precise simulation processes. Evolutionary Aesthetics is a bourgeoning and thriving sub-field of Aesthetics, the main aim of which is “the importation of aesthetics into natural sciences, and especially its integration into the heuristic of Darwin’s evolutionary theory.” Scholars working in the field attempt to determine through the adoption of an interdisciplinary research methodology whether and to what extent Darwinian evolution can shed light on our capacity to have aesthetic experiences, make aesthetic judgments (both of art and natural beauty), and produce literary, visual, musical (...) artworks. Notwithstanding Evolutionary Aesthetics’ growing popularity in the past two decades, a look into the state of current research suggests a significant degree of haziness in the field from both epistemological-methodological and theoretical points of view. The main aim of the present paper is to make a first step towards a revision and extension of the discipline by assessing the role and potential of epigenetics in evolutionarily inspired aesthetic research. Epigenetics is among the youngest and most fascinating research fields in contemporary biology. But one of the most significant occurrences of the word “epigenesis” (the closest “ancestor” of contemporary “epigenetics”) is in Immanuel Kant’s third Critique, his aesthetic masterpiece. How have people talked about the organoleptic characteristics of wines? How and why have descriptive and evaluative vocabularies changed over time? The essay shows that these vocabularies have shifted from the spare to the elaborate, from medical implications to aesthetic analyses, from a leading concern with “goodness” (authenticity, soundness) to interest in the analytic description of component flavors and odors. The causes of these changes are various: one involves the importance, and eventual disappearance, of a traditional physiological framework for appreciating (...) the powers and qualities of different sorts of aliment, including wines; another concerns the development of chemical sciences concerned with flavor components; and still another flows from changing social and economic circumstances in which wine was consumed and the functions served by languages of connoisseurship. The historical span surveyed here extends from Antiquity to the present and the essay displays talk about wine tastes as a perspicuous site for understanding aspects of wide-ranging social and cultural change. As the twenty-first century begins, Benjamin’s aura as the quality of an authentic-art-object might be outdated, but the notion of kitsch remains essential in a post-Warholian world. The following discussion is an attempt to assess Western contemporaneity. By using a few examples, so to dissect problems into their smallest components, I suggest that the current popularity of kitsch inclinations and behaviours in Western societies are not a means to resist cultural and aesthetic elitism, but an implication of widespread bad taste.

Rolls uses evolutionary theory and behavioral learning theory in his analysis of emotion. We believe that both theories are greatly underutilized, leaving an incomplete description of the nature of emotion and its neural foundation.

The aim of this paper is to present an explanation for the impact of normative considerations on people’s assessment of certain seemingly purely descriptive matters. The explanation is based on two main claims. First, a large category of expressions are tacitly modal: they are contextually equivalent to modal proxies. Second, the interpretation of predominantly circumstantial or teleological modals is subject to certain constraints which make certain possibilities salient at the expense of others.

Based on the French notion of terroir or ‘the taste of place,’ a certified geographical indication (GI) identifies an agro-food product as originating in a particular territory and suggests that its quality, reputation, or other characteristics are essentially or exclusively attributable to its geographical origin. Previous scholarship exploring the social construction of terroir has focused on how disparities in political, economic, and cultural power shape GI regulations, certification procedures, and territorial boundaries. While these works have considered knowledge as a resource (...) deployed through relations of authority, studies of GI implementation have not adequately considered an important aspect of power in contemporary politics: the epistemic authority to assert the legitimacy of knowledge and its relevance to policymaking. In contrast, in this article, I take the accomplishment of epistemic authority – to determine the ‘essential’ and ‘exclusive’ physical and/or cultural attributes of place that shape product character – as key to the social construction of terroir and the institutionalization of GI regulations. This process is explored through a case study of Ecuador’s 2013-2019 implementation of a GI for Galápagos Islands coffee. I draw on analysis of relevant policy and regulatory documents and semi-structured interviews with 21 key stakeholders to argue that analytical attention to the legitimacy and relevance of terroir knowledge explains how coffee producers were able to deploy authoritative knowledge to disrupt and reinforce relations of authority and challenge the terms and mechanisms of GI qualification. Synthetic foods advocates offer the promise of efficient, reliable, and sustainable food production. Engineered organisms become factories to produce food. Proponents claim that through this technique important barriers can be eliminated which would facilitate the production of traditional foods outside their climatic range. This technique would allow reducing food miles, secure future supply, and maintain quality and taste expectations. In this paper, we examine coffee production via biobased means. A startup called Atomo Coffee aims to produce synthetic coffee with the (...) aim of saving ‘the taste of coffee’ from the effects of climate change. This decontextualisation of coffee production ignores the current and historical contributions of coffee farmers in two ways: the traditional varieties in taste of coffee and their cultural significance, and the potential shade-grown coffee plantations have in capturing carbon. In addition, synthetic coffee may lead to the loss of agricultural biodiversity and the removal of resources away from production systems that provide a safe space for tropical flora and fauna. How should the ‘taste of coffee’ be owned? We investigate the property regimes under which we could consider owning the taste of coffee as a ‘synthetic’ agrobiodiversity to help identify rights and responsibilities. Building on this analysis, we consider dimensions of responsible innovation and social justice to help guide synthetic foods as an agricultural innovation. (shrink)

Different from the autonomy of understanding in cognition and the autonomy of practical reason in praxis, the heautonomy in the judgement of taste is reflexive. The reflexivity consists not only in the fact that the power of judgement legislates to its own usage but also, and more importantly, it legislates to itself through its own operative process. This normativity, based on the self-referential structure of pure aesthetic judgement and the a priori principle of subjective, internal purposiveness, can be regarded as (...) a self-discovering and self-flourishing principle that organically grows out of the aesthetic experience and, at the same time, regulates its growth in return. In this scenario, aesthetic freedom can be identified as a third kind of freedom different from Kant’s transcendental freedom and practical freedom – a flexible and living freedom with spontaneous legislation, but not bound by any determinate laws. Recent decades have seen a rapid increase in the rate of conversion from conventional to organic farming, as organic farming shifted from an alternative production approach practiced by a small number of idealists, to the de facto alternative to mainstream conventional production. Although there has been considerable academic debate as to the role of agri-business penetration into the production and marketing chains of organic farming (‘conventionalization’), less is known about how the economic drivers of conventionalization are negotiated into practices at (...) the farm level. Drawing on Bourdieu’s conceptualization of economic and cultural capitals, the direct connection between symbols of ‘good farming’ and the economic requirements of maintaining a viable farming business (i.e., the ‘taste of necessity’) is demonstrated. Findings indicate that conventional and organic farmers in the study sites identified a similar range of cultural symbols, but organic farmers emphasized different symbols within this range. This diversity and selectivity demonstrates the fragmentation and contestation of ideals resulting from economic challenges at the time of the study. Economic capital is important to the decision to consider conversion to organic farming, but formal conversion reflects re-weighting of forms of cultural capital. The author argues that recognition of the impact of economic pressures on conventional farming, which in the study sites often led to reduced input use rather than intensification, is missing from the conventionalization debate. The mainstreaming of organic farming production has presented conventional farmers with a set of alternative or re-weighted symbols and a crucible for reflexive consideration of their own standards and practices of farming. Repetitions (takrārs), which in the dictionary means ‘the repetition of something one after the other and its renewal in terms of wording and meaning’, are one of the most basic stylistic, address and textual structure features of the Qur’ān and at the same time one of the structural problems that have troubled the commentators. Repetitive nouns, verbs and letters in many verses, as well as sentences and phrases that sound like rhymes are of this kind. Although some of the benefits (...) of repetitions in the Qur’ān have been described in our tradition, it has also been stated by some that this is tiresome for a good and faṣīh word, far from any benefit, one of the disasters and defects of words that do not correspond to a mūciz word. At the same time, it has also been suggested that this is one of the things that indicate the corruption and weakness of the Qur’ānic naẓm and the existence of confusion in its naẓm. For this reason, literary scholars, linguists and commentators have considered the absence of repetition in phrases as one of the conditions of its feṣāhat (eloquence). In addition to all these, some in our tradition have treated these repetitive expressions not as a problem, but as a divine, transcendental style, and have sought a wisdom, a literary wit and a secret related to meaning. On the contrary, some have argued that the Qur’ān was revealed in the patterns of language use of the Arabs of that period, that the divine meaning and message was formed according to the speech patterns and styles of their words, advice and addresses, that the similarities of the patterns repeated in the Qur’ān were also found in their poetry, and for this reason, they associated the repetitions with the customs and habits of language use and literary tastes of the Arabs of the Hijāz region in daily speech and types of literature. Therefore, as some scholars in our tradition have argued, are these repetitions really a defect of expression, an artistic beauty? or structures that the Arabs of the nuzūl period did not know, were not familiar with, and did not hear, and that contain various subtleties of meaning? or on the contrary, are these expression patterns that were present and well-known in daily speech patterns and uses, in the literary genres of the Arabs of that day, and that were formed and manifested within the framework of their linguistic customs and traditions and literary tastes? İn this article, within the framework of these questions and problems, the relationship of the repetitions in the Qur’ān with the language usage customs, literary tastes, and linguistic cultural anthropological structures of the Arabs of the period of its revelation is examined. Therefore, as a result of this research, which is thought to be different from the existing academic studies, original and authentic, and the literature review method is used, ıt is clearly understood that the repetitions in the Qur’ān are ‘expressive structures related to the literary tastes, linguistic customs and traditions of the Arabs of the nuzūl period’ in terms of address/textual structure. The Texas Chain Saw Massacre (Tobe Hooper, 1974) presents a nightmarish vision of an America, metaphorically and literally devouring itself. ‘Home, sweet, home’ becomes the slaughterhouse and consumers become the consumed as ‘cannibalistic capitalism’ (embodied by a family of unemployed but murderous abattoir workers), wreaks havoc on the lives of a hedonistic group of youths, as the ‘Age of Aquarius’ comes to a bloody end. Chain Saw offers a model of horror that is both deeply rooted in American ideology, taboos, (...) and the key (and interdependent) institutions of the family, the worker and capitalism, yet produces aberrant and transgressive versions of these same social units. In this paper, the film’s representation of ‘cannibalistic capitalism’ will be explored in relation to Georges Bataille’s theory of taboo and transgression. While Bataille asserts that the ‘main function of all taboos is to combat violence’ (thus maintaining the power, integrity and conformity of social institutions), he also suggests that the taboo paradoxically begets its own violent transgression. In The Texas Chain Saw Massacre , capitalism’s transgressive excesses both ignite the taboo’s prohibitive power while revelling in and glorifying its violation. This paper offers a ‘taste’ of a Bataillean approach to the theorising of horror and the spectatorial ‘pleasures’ of submitting to the anguish it provokes. (shrink)

The article which was published for the first and single time in 1939, is the starting point of Leo Strauss’ “esoteric” scholarship. While devoted to the investigation of Xenophon’s treatise called Constitution of the Lacedemonians the article, using it as an example, shows reasons, techniques, and the meaning of writing “between the lines”. Strauss sequentially shows how Xenophon hides his critique of the Spartan constitution behind the facade of an encomium. But what may be even more important, in the piece (...) Strauss clearly tries to overcome the established 19th-century view that Xenophon was a mediocre and charged with laconophilia historian; he tries to reinstate Xenophon’s position as that of a serious thinker: a Socratic philosopher. He shows how meticulously Xenophon studies the Spartan constitution and that this apparently very successful and very stable regime, in fact, deserves serious politico-philosophic critique. Thereby he partially reveals the essence of classical political philosophy to careful readers. (shrink)

Nowadays, the major depressive disorder is a common disease that negatively affects the life quality of many people around the world. As MDD symptoms are closely related with the changes in food and eating, the relation between patients’ emotional responses and food tastes could be used as criteria for diagnostic. Until now, studies on the emotional response to different food tastes for patients affected by MDD have been poorly described in literature. Therefore, the aim of this study was to evaluate (...) the emotional response of patients suffering from MDD to the imagined different food tastes and to compare the results with a control group. Emotional responses in tested participants were induced by using cards with words of basic food tastes such as “sweet,” “salty,” “bitter,” “sour,” and “neutral.” The assessment of emotional response was performed with FaceReader 6 software. The outcome of this study showed that participants with MDD expressed lower “happy” and “contempt” and higher “surprised” emotions, along with a higher negative valence mean, in comparison with controls for all tested basic tastes of food. When Likert scale was used, significant differences in response were only found for “sour” and “salty” imaginary tastes between healthy group and patients with MDD. The findings of this study provide the additional data on food–associated emotion analysis of MDD patients and could be useful for the further development of the contactless method for early diagnosis of MDD. According to contextualism, the extension of claims of personal taste is dependent on the context of utterance. According to truth relativism, their extension depends on the context of assessment. On this view, when the tastes of a speaker change, so does the truth value of a previously uttered taste claim, and if it is false, the speaker is required to retract it. Both views make strong empirical assumptions, which are here put to the test for the first time in three (...) experiments with over 740 participants. It turns out that the linguistic behaviour of ordinary English speakers is consistent with contextualist predictions and inconsistent with the predictions of the most widely discussed form of truth relativism advocated by John MacFarlane.
