Work on farms and in restaurants is characterized by highly gendered and racialized divisions of labor, low wages, and persistent inequalities. Gender, race, and ethnicity often determine the spaces where people work in the food system. Although some research focuses on gendered divisions of labor in restaurants and on farms, few efforts look more broadly at intersectional inequalities in food work. Our study examines how inequality is perpetuated through restaurant and farm work in the United States and, specifically, how gender (...) and race/ethnicity influence where people work, their tasks and responsibilities, and their work experiences. In describing restaurant work, people in the restaurant industry typically refer to the front and back of the house to distinguish between different working spaces, jobs, and workers. We use this spatial metaphor of front and back of the house to analyze intersectional inequalities of food work in restaurants and on farms. The data derive from conversations with 63 restaurant and farm owners, managers, and workers in California and Pennsylvania. Our findings suggest that gendered and racialized bodies often define who works in the front and back of the “house,” and that owners and workers often naturalize gender and racial divisions of labor in food work. Despite these patterns, we found evidence of attempts to reduce these inequalities on farms and in restaurants. (shrink)

Recently, growing numbers of interns, apprentices, and volunteers are being recruited to work seasonally on ecologically oriented and organic farms across the global north. To date, there has been very little research examining these emergent forms of non-waged work. In this paper, we analyze the relationships between non-waged agricultural work and the economic circumstances of small- to medium-size farms and the non-economic ambitions of farm operators. We do so through a quantitative and qualitative analysis of farmers’ responses to two surveys (...) we conducted of farmers using non-waged workers in Ontario, Canada. We situate our analysis within debates on the agrarian question, which we contend requires an account for both the economic and non-economic dimensions of new forms of non-waged work on farms. We suggest that many ecologically oriented farm operators are struggling financially and report low gross on-farm revenues and personal incomes. We argue that in addition to relying on off-farm incomes and self-exploitation, many farms are managing to persist in a challenging economic climate through their use of intern, apprentice, and volunteer labor. However, we also suggest that the growth of non-waged work on farms is not simply being driven by economic processes but also a series of non-economic relationships focused on non-institutional farmer training, the pursuit of sustainability, and social movement building. We suggest, the “economic” and “non-economic” dimensions of internships, apprenticeships, and forms of volunteerism sit uneasily alongside of one another, generating questions about the politics, ethics, and sustainability of non-waged work and ecological farming. Despite much popular interest in food issues, there remains a lack of social justice in the American agrifood system, as evidenced by prevalent hunger and obesity in low-income populations and exploitation of farmworkers. While many consumers and alternative agrifood organizations express interest in and support social justice goals, the incorporation of these goals into on-the-ground alternatives is often tenuous. Academics have an important role in calling out social justice issues and developing the critical thinking skills that can redress inequality in (...) the agrifood system. Academics can challenge ideological categories of inquiry and problem definition, include justice factors in defining research problems, and develop participatory, problem-solving research within social justice movements. In addition, scholars can educate students about the power of epistemologies, discourse, and ideology, thereby expanding the limits and boundaries of what is possible in transforming the agrifood system. In these ways, the academy can be a key player in the creation of a diverse agrifood movement that embraces the discourse of social justice. (shrink)

Michel Foucault has become famous for a series of books that have permanently altered our understanding of many institutions of Western society. He analyzed mental institutions in the remarkable Madness and Civilization; hospitals in The Birth of the Clinic; prisons in Discipline and Punish; and schools and families in The History of Sexuality. But the general reader as well as the specialist is apt to miss the consistent purposes that lay behind these difficult individual studies, thus losing sight of the (...) broad social vision and political aims that unified them.
